オステーアシードル
 
このシードルは、2種類の酵母を使って醸造されています。一次発酵では、発酵中に酸味と豊かな香りを生み出すアシナガバチ由来のラカンセア酵母を使用。二次発酵では、日本酒の吟醸造りに使われる秋田県産の酵母を使用し、上品な香りを生み出しています。 リンゴ、パイナップル、ハチミツなどの香りと、心地よいまろやかな酸味が特徴の、夏にぴったりのシードルです。

製造方法
松川町産の晩生りんごを収穫し、香りが出るまで貯蔵した後、搾汁。 酵母はアシナガバチ由来と秋田県産の吟醸酵母の2種類を使用した。リンゴ、パイナップル、ハチミツの上品で心地よい香りがします。酸味と苦味が心地よく、まろやかな味わいです。微炭酸です。

We've brought together a dynamic team of creators, and put on the lab jackets to produce this beautifully presented, very quaffable, aromatic cider.
 
The delicous Fuji apple is great for snacking, but less suitable for  cider making, due to it's exceptional level of sweetness often leading to a cloying cider beverage.
 
To overcome the sweetness of these typical dessert apples we've deployed some rather unique yeast strains.  During production Austeja under went a meticilous staged fermentation with two yeast strains. We started the fermentation of our juiced apples on Lachancea thermotolerans to kick up the acidity during production, helping to bring balance to the batch with mellow lactic acid produced by the strains. These strains add wonderful, yet suttle aromas of honey and Sweet Alyssum floral notes. To stretch the aromatics futher, we selected a patented yeast strain from Akita prefecture, used in ginjo styles of Nihonshu ( Japanese sake )  to increase the presence of apple, pineapple -esque notes. This approach to fermentation has given us an apple rich aroma, without residual sweetness, semi-sweet cider.
